The story behind the bakery that became a New York institution.

Levain Bakery began with two friends, a swimming pool, and their shared enthusiasm for baking. Before launching a modest bread shop on West 74th Street, Pam Weekes and Connie McDonald baked bread for restaurants across New York City. The bakery's name comes from the French term for leavened bread.

In 1995, every loaf, baguette, and roll was shaped by hand. While preparing for triathlons, Pam and Connie developed an oversized chocolate chip walnut cookie as an energy boost. That first batch soon became a shop favorite, and the cookie went on to become a New York icon.

Three decades later, the guiding idea remains unchanged: choose quality ingredients, bake thoughtfully, and share generous cookies and gifts that make the day brighter.

We’ve always been incredibly grateful for the support of the communities we’re a part of, and we strive to reciprocate that support in ways big and small. On opening day, our new bakeries donate all proceeds to a local charity organization, and at the end of every day thereafter, we donate all unsold baked goods. It brings us great pride to think of all the people who’ve been treated to a fresh cookie, a delicious bread roll, or a flavorful muffin in the midst of a challenging day.
